I miss Mexico already! Last night Frank and I were craving Mexican food but we also need to get back on our diet now that the cruise is over so we decided to make healthy fish tacos! As you can see I like a lot of cilantro and onions.
Ingredients:
2 pc. Tilapia fish
Carne asada seasoning
4 taco size tortillas (flour or corn)
1 Scallion onion
Handful of cilantro
1/2 Jalapeno
1 Key lime
Trader Joe's Tarter Sauce with dill & jalapeno
Fresh salsa
Directions:
Sprinkle carne asada seasoning on both sides of fish
BBQ for 10-15 minutes or until fully cooked
Cut up all fresh ingredients
Break apart cooked fish into small pieces
Warm tortillas on stove top
Spread tarter sauce on tortilla
Add fish, onions, cilantro, jalapeno and salsa
Squeeze lime juice over top
And enjoy!
Makes 4 tacos
